Tiganites - Ancient Greek Pancakes

This recipe came straight from the cradle of civilization - Ancient Greece. Admittedly, it's not much different than your usual pancake, but with the use of olive oil and whole wheat flour, you'll feel the difference. Plus, who would ever think to top pancakes with sesame seeds?

Tiganites - Ancient Greek Pancakes
Ingredients for ancient pancakes:
Water - 1 cup
Honey - 2 tbsp.
Salt - 1/4 tsp.
Olive oil - as needed
Sesame - a handful for topping
Method of preparing the ancient pancakes:
  1. Toast the sesame seeds in a dry pan and set aside. Whisk the salt into the water and let it dissolve.
  2. Combine the flour, salt water, and honey together. Cover with a towel and let sit for 20 minutes.
  3. Coat the pan with olive oil generously. Fry the pancakes in batches. Serve hot with a topping of toasted sesame seeds and honey.
