Cauliflower Fritters

Who doesn't love fritters? They're crunchy, they're savory, and they're ready in under an hour. The only issue is that traditional fritters are not the healthiest, so serving them to kids and the entire family often is usually reserved for special occasions only. These cauliflower fritters flip the script, as they retain all the great qualities of traditional fritters while being much healthier overall.

Cauliflower Fritters
Ingredients for Cauliflower Fritters:
Cauliflower - 1 medium head (roughly chopped)
Onion - 1 small (roughly chopped)
Olive oil - 2 tbsp.
Parmesan cheese - 3 tbsp. (grated)
Eggs - 2 (lightly beaten)
All-Purpose flour - 1/2 cup
Flat-leaf parsley - 1 tbsp. (finely chopped)
Garlic powder - 1/2 tsp.
Salt and Pepper - to taste
Neutral oil - for frying (you can also use butter)
Method of preparing the Cauliflower Fritters:
  1. In a food processor, process the cauliflower florets and the onions until they are 'riced,' or finely chopped but not completely pureed.
  2. Transfer the vegetables to a large microwave-safe bowl, seal with a lid or plastic wrap, and microwave on high for 3-4 minutes. Then remove from the microwave but leave the lid and let vegetables steam for 5 more minutes.
  3. Remove the cover from the vegetables, then fold in the rest of the ingredients: olive oil, parmesan, eggs, flour, chopped parsley, garlic powder, salt, and pepper. Mix until a homogenous batter forms.
  4. Heat some butter or neutral oil in a large skillet over medium heat.
  5. When the oil is hot but not smoking, spoon the cauliflower batter onto the hot skillet and press down on the fritter with the spoon to flatten it until it's about 1/2-inch thick.
  6. The fritters are ready to flip when they're golden brown on the edges, this should take about 3 minutes. Once fully cooked through and golden brown, transfer the fritters onto a plate lined with paper towels (to soak up the excess oil).
  7. Repeat the same process with the remainder of the batter. This recipe makes around 15-16 fritters depending on the size of your cauliflower.
  8. Serve cauliflower fritters fresh with sour cream or Greek yogurt on the side.
