Quinoa and Oatmeal Cookies

By now, we all know that avoiding sweets is neither an achievable nor a satisfying goal. The key is balance! These cookies here won't affect your health or your weight. Healthy foods don't have to be dull, and they can even be tasty. They contain natural proteins from quinoa, which are perfect for those of you who don't want to commit to the dreaded protein powder.

Quinoa and Oatmeal Cookies
Ingredients for Quinoa and Oatmeal Cookies:
Flour - 2 cups (whole-wheat flour works as well)
Salt - 1/2 tsp.
Cinnamon - 2 tsp. (ground)
Cloves - 1/4 tsp. (ground)
Nutmeg - 1/2 tsp. (ground)
Baking soda - 1 tsp.
Unsalted butter - 1/2 cup (at room temperature)
Brown sugar - 1 cup
Eggs - 2 (large)
Applesauce - 1 cup
Vanilla extract - 2 tbsp.
Quinoa - 1/2 cup (cooked and cooled)
Chocolate chips - 1 cup
Raisins - 1 cup (optional)
Rolled Oats - 2 1/2 cups
Method of preparing the Quinoa and Oatmeal Cookies:
  1. Preheat oven to 375°F (190°C). Line a baking sheet.
  2. Whisk together the flour, salt, cinnamon, cloves, nutmeg, and baking soda.
  3. Using a mixer (or manually), cream the butter and brown sugar together until smooth (about 3 minutes). Then add the eggs and vanilla extract of your choice. Finally, add the applesauce and the raisins.
  4. Gradually add the dry ingredients and then the oats, quinoa, raisins, and chocolate chips. Mix thoroughly.
  5. Scoop the mixture one spoon at a time onto a lined baking sheet. Make sure they're not too close together. Bake for 12 to 14 minutes. Cool on a wire rack to keep the cookies crispy and not soggy.
