Carrot Brownies

Don't have much time left before the guests arrive before Easter and need to whip up a quick dessert? These carrot brownies take less than an hour to prepare, and they're delicious - a no-brainer!

Ingredients for Carrot Brownies:
Whole spelt flour - 1/2 cup
Oat flour - 1/2 cup
Cocoa powder - 1/3 cup
Baking soda - 1/4 tsp.
Salt - 1/4 tsp.
Milk - 3/4 cup
Carrot - 1 (finely grated)
Applesauce - 2 tbsp.
Neutral oil - 2 tbsp.
Coconut sugar - 1 tbsp.
Brown rice syrup - 1 tbsp.
Vanilla Extract - 1 tbsp.
Dark chocolate - 1/4 cup (chopped)
Method of preparing the Carrot Brownies:
  1. Preheat the oven to 350°F (180°C).
  2. In a mixing bowl, combine all the flour, cocoa powder, baking soda, and salt.
  3. In a larger bowl, mix the remaining ingredients, except for the chocolate.
  4. Add the dry mix to the large bowl and mix everything until well combined.
  5. Pour the batter into a well-oiled 8x8-inch baking tray. Sprinkle the top with the reserved chocolate.
  6. Bake for 14-16 minutes, or until a toothpick comes out clean. Then cool, cut, and serve.
Chef's Tip:
This can easily be made vegan/dairy-free by using plant-based milk.
