North Woods Bean Soup

This simple soup is easy and great for a winter night. It's savory and made extra delicious with the addition of spiced turkey kielbasa (a variety of Turkey sausage), which gives it a rich, slow-simmered flavor. Serve it with crusty bread or garlic toast for a satisfying meal.

North Woods Bean Soup
Ingredients for North Woods Bean Soup:
Baby carrots - 1 cup (halved)
Onions - 1 cup (chopped)
Garlic - 2 cloves (minced)
Turkey kielbasa - 7 oz (cut into 1/2-inch pieces)
Chicken broth - 4 cups
Italian seasoning - 1/2 tsp.
Black pepper - 1/2 tsp.
Great Northern beans - 2 (16-oz) cans (drained and rinsed)
Baby spinach - 1 (6-oz) bag (fresh)
Method of preparing the North Woods Bean Soup:
  1. Heat a large saucepan coated with cooking spray over medium-high heat. Add carrots, onion, garlic, and kielbasa, and sauté for 3 minutes, stirring occasionally.
  2. Reduce heat to medium, and cook for 5 minutes. Add the broth, Italian seasoning, pepper, and beans. Bring to a boil, reduce heat, and simmer for 5 minutes
  3. Place 2 cups of the soup in a food processor or blender, and process until smooth. Return the pureed mixture to the pan. Simmer an additional 5 minutes. 
  4. Remove soup from heat. Add the spinach, stirring until spinach wilts.
Chef's Tip:
Great Northern beans are also known as simple large white beans.
