Saffron Drink - Kesar Milk

Traditionally, saffron was a spice reserved only for royalty. Today it is still fairly expensive but can be found in any grocer's spice aisle. It has several medicinal properties and is considered a natural mood enhancer. This drink from the Indian cuisine can be enjoyed hot or cold and is usually given to pregnant women for nourishment. 

You can swap the sugar for any sweetener you prefer.

Saffron Drink - Kesar Milk
Ingredients for saffron milk:
Whole milk - 1 cup (or any of your choice)
Sugar - 1 tbsp. (or less)
Saffron - a pinch
Almond flour - 1 1/2 tbsp.
Cardamom - 1/8 tsp.
Method of preparing the saffron milk:
  1. Add milk, sugar and saffron to kettle or pot and bring to a boil.
  2. Season with cardamom and almonds and serve on a cold morning!
Chef's Tip:
If you don't have almond flour, soak unsalted almonds in warm water for 15 minutes and grind them into a paste instead.
