Black Bean Soup

Black Bean Soup
Ingredients for Black Bean Soup:
Olive oil - 2 tbsp.
Onion - 1 cup (chopped)
Celery - 3/4 cup (chopped)
Carrot - 1/2 cup (chopped)
Garlic - 2 tbsp. (minced)
Cumin - 1/2 tsp.
Smoked paprika - 1/2 tsp.
Salt - to taste
Black beans - 6 cups (cooked)
Water - 4 cups
Fresh cilantro - 3 tbsp. (chopped)
Cheddar cheese or sour cream - for topping (optional)
Green bell peppers - 1/4 cup (chopped)
Chili powder - 2 tsp.
Method of preparing the Black Bean Soup:
  1. Heat the oil in a large pot, then add in the onion, bell pepper, celery, carrot, and garlic with one teaspoon of salt. Sauté for 10 minutes or until soft.
  2. Add in the spices, beans, and water. Bring everything to a boil and lower the heat to a simmer. Leave cooking for 20 minutes.
  3. Stir in the vinegar and cilantro.
  4. Puree the soup using a blender or food processor.
  5. Season to your liking and serve with a topping of your choice.
