Chunky Potato-Crab Chowder

There are few things better than warming up with a hot bowl of soup, on a cold winter day. This Chunky Potato-Crab Chowder is super easy to make and will hit the spot. It's full of amazing flavor and will be loved by everyone in the family.

Ingredients for Chunky Potato-Crab Chowder:
Butter - 2 tbsp.
Onions - 1 cup (chopped)
Celery - 3/4 cup (chopped)
Garlic - 1 clove (minced)
Red potato - 3 medium (cut into 1-inch cubes)
All-Purpose flour - 3 tbsp.
Milk - 2 1/2 cups
Thyme - 2 tsp. (chopped)
Black pepper - 1/2 tsp.
Nutmeg - 1/4 tsp.
Creamed corn - 1 (14 oz) can
Chicken broth - 1 (14-ounce) can
Crab meat - 8 oz (shell pieces removed)
Parsley - 3 tbsp. (chopped)
Salt - 1 tsp.
Method of preparing the Chunky Potato-Crab Chowder:
  1. Melt butter in a large saucepan over medium-high heat. Add onion, celery, and garlic, then sauté for 4 minutes. Add potato, and sauté for 1 minute. 
  2. Sprinkle with flour, and cook 1 minute, stirring constantly. Stir in milk, thyme, pepper, nutmeg, corn, and broth. Bring to a simmer over medium heat, stirring frequently.
  3. Cover, reduce heat, and simmer 20 minutes or until potatoes become tender, stirring occasionally. Stir in crab, parsley, and salt. Cook 5 minutes, stirring occasionally.
