We think you'll love how you can just eat this whole dish with a spoon. Simply scoop up some chickpeas (garbanzo beans) with the soft sweet potatoes for a comforting bite full of flavor and fiber. But the most delicious thing about this baked dish, is that it only takes 30 minutes to prepare, from the very start, to the final serve.

Mix all ingredients, adding the almond milk last until you have your desired sauce consistency.

Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment. Rinse the potatoes and cut them in half, length wise.

Add olive oil cumin, coriander, cinnamon, salt and paprika to the beans. Arrange the sweet potatoes on the baking sheet and spread the garbanzo beans over them as in the picture.

Bake for 25 minutes. Drizzle with the sauce and serve.
Chef's Tip:
You can garnish with fresh cherry tomatoes as shown in the picture, and garnish with parsley.
