Walnuts - 1 cup
(coarsely chopped, lightly toasted)
Method of preparing the cookies:
Preheat oven to 400°F and line a baking sheet.
With the help of an electric mixer, cream the butter, 1/2 cup powdered sugar, and vanilla until smooth.
Add the flour and salt until you have a kneadable dough. Knead in the walnuts.
Using an ice cream scoop for even measure, make balls from the dough and arrange them on the lined baking sheet, 1 inch apart.
Bake 12-15 minutes. Roll the balls in the remaining 2 cups of powdered sugar while still hot and let cool. Once cooled, roll again in the sugar and serve.
Chef's Tip:
These snowballs, unlike actual snowballs, will last you up to a week in the fridge.
