Melomakarona are the Greek Christmas cookies. And when you make them yourself at home, you'll quickly realize why! Your house will be filled with Christmasy aromas of clove and honey, strong enough to revive the holiday spirit.
Place all syrup ingredients in a saucepan and boil. Once boiling lower flame and cook until thick- about 25-30 minutes. Remove from heat and let cool completely.
Preheat oven to 360°F. Line a baking sheet.
Whisk the flour and baking powder. In another bowl, combine the sugar, orange juice, cinnamon and vanilla. Add the soda and mix.
Add the oils, water and honey and mix. Fold in the dry ingredients.
Make 24 balls, place evenly spaced on the baking dish and lightly press each one to flatten. Punch holes in each cookie with a fork, but don't go deeper than half the cookie's thickness.
