Chili Garlic Steak and Macadamia Poke Bowl

Poke is usually a light and healthy dish, but it can be hearty too. If you are not a big fan of fish, try steak instead. This recipe uses fresh chilies, garlic and shallots, with steak served over jasmine rice.

Ingredients for bowl:
Steak - 2 cups shreds
Rice - 2 cups (Jasmine rice is best)
Sprouts - 1 cup (any microgreen of your choice)
Shallot - 1/4 cup (minced)
Macadamia nut - 1/4 cup
Garlic - 3 tbsp. (minced)
Cayenne pepper - 2 tbsp.
Tamari sauce - 1 tbsp. (alternative: soy sauce)
Vegetable oil - 1/2 tbsp.
Orange blossom water - a dash (alternative: fine zest/orange oil)
Method of preparing the bowl:
  1. Cook the rice.
  2. Preheat the oven to 425°F. Combine the tamari sauce and oil with half of the chili, garlic and shallot. Pour over the steak. 
  3. Let the steak marinate for 5 minutes, then roast it in the oven on a baking sheet. For a medium steak, cook for 15 minutes.
  4. Remove the steak from the oven and let it rest, then cut into cubes.  
  5. Stir a dash of orange blossom water (alternatively, use 3 drops of oil or a pinch of fine orange zest) into the jasmine rice and place in a bowl.
  6. Mix the steak and any juices from cutting with macadamias, sprouts and the remaining chili, garlic and shallots, and pile on top of some rice.
