Method of preparing the root veggies soup:

In a large saucepan, bring a pot of water to a boil. Add all the ingredients, cover, reduce the heat and simmer for 30 minutes.

Place half of the sweet potato mixture in a blender and process until smooth. Return the pureed mixture to the pot. Now is your time to add seasonings, and cook over medium to high heat until thoroughly cooked through.
Chef's Tip:
This soup is a great base for other root vegetables such as sunroots and carrots. Zucchinis will also pair in well.
