Have some leftover turkey after your Thanksgiving or Christmas dinner? No problem. Use what's left of the turkey carcass and make this amazing turkey soup that you can enjoy for days. It's simple, healthy, and super easy to make.
Break the turkey carcass to fit into a 6-quart Dutch oven, add water, salt, pepper, sage, and bay leaf to the carcass. Heat until boiling over high heat, then reduce heat to low. Cover and simmer for 1 hour 30 minutes.
Remove any residue that rises to the surface. Remove bones, meat, and bay leaf from broth, then cool. When cool enough to handle, remove meat from bones and shred into tiny pieces. Throw away all bones and the bay leaf.
Add the barley. Boil, then simmer. Cover, let simmer for 30 minutes. Stir occasionally.
Stir in carrots, onion, celery, and shredded turkey. Simmer uncovered 20 to 25 minutes longer, until vegetables and barley are tender, then stir in parsley. Your soup is now ready!
