Hearty Cabbage Soup

It's time the cabbage soup had a makeover. It is usually regarded as an almost utilitarian soup, a default, dreary and flavorless soup. Not anymore! If you only add some tomatoes to any dish it will become a whole fiesta, why should it be any different with soup?

Ingredients for cabbage soup:
Olive oil - 3 tbsp.
Onions - 1/2 (chopped)
Garlic - 2 cloves (minced)
Vegetable or chicken stock - 2 quarts (or mix 8 tbsp soup mix powder in 2 quarts water)
Salt and Pepper - as needed
Dried Thyme - 1/2 tsp.
Cabbage - 1/2 head (coarsely chopped)
Carrots - 4 (peeled and chopped)
Celery - 2 stalks (thinly sliced)
Canned tomatoes - 14 oz. can
Method of preparing the cabbage soup:
  1. Sauté the onion and garlic for 5 minutes. Then add the rest of the ingredients, cover and cook for 30 minutes.
  2. Stir every 10 minutes, check and fix (if needed) the seasoning towards the end of the 30-minute mark.
  3. The soup is ready when all the vegetables are tender.
Chef's Tip:
Add cooked chickpeas for an extra boost pf protein.
