It's time the cabbage soup had a makeover. It is usually regarded as an almost utilitarian soup, a default, dreary and flavorless soup. Not anymore! If you only add some tomatoes to any dish it will become a whole fiesta, why should it be any different with soup?

Sauté the onion and garlic for 5 minutes. Then add the rest of the ingredients, cover and cook for 30 minutes.

Stir every 10 minutes, check and fix (if needed) the seasoning towards the end of the 30-minute mark.

The soup is ready when all the vegetables are tender.
Chef's Tip:
Add cooked chickpeas for an extra boost pf protein.
