Chia seed pudding is a delicious sweet snack that's also low in calories and vegan. This version of this light meal is made with almond milk, coconut flakes, and bananas, and both kids and adults will enjoy it.
Method of preparing the Coconut Banana Chia Seed Pudding:
In a blender, combine the almond milk, 1 banana cut into chunks, chia seeds, honey, vanilla extract, 1/3 cup coconut flakes, and salt. Blend until smooth and even.
Cut the second banana into chunks, add it to the food processor, and pulse it a few times.
Pour the chia pudding into a sealable container, cover, and refrigerate for at least 2 hours until it thickens.
When ready to serve, garnish with more coconut flakes and a slice of banana.
Chef's Tip:
You can include some apple bits, banana bites, or sweetened walnuts as garnish, as shown in the photo.
