There’s a reason why the majority of us never outgrow lollipops: they’re fun, sweet snacks that remind us of our childhood and bring a smile to our faces. Therefore, in celebration of the humble lollipop, here's a delicious champagne lollipop recipe you can whip up at home.

Method of preparing the lollipops:

Mix the champagne, water, sugar, corn syrup, and salt in a saucepan.

Bring to a boil over medium heat, and stir occasionally until all the sugar has dissolved. Clip a candy thermometer onto the side of the saucepan. Without stirring, allow the mixture to boil until it reaches 300°F.

Spray the mold with cooking spray and quickly drop the mixture into the mold. Using a spoon here helps prevent a lot of mess.

Place a lollipop stick in the center of each mold, and twist it around so that it has been fully covered in syrup.

If you want to, you can sprinkle some edible confetti onto the pops, and add some food dye for different colors.

Allow the pops to cool completely before removing them from the mold. Store in an airtight container until you’re ready to enjoy them.
