Bagel Bites With Cheese Dip

There's nothing quite like bite-sized foods. Be it finger food, snacks, starters, or even sweet treats, we just love our food fun-sized, regardless of age. These homemade bagel bites will tend to just that.

Ingredients for bagels:
Warm water - 1 1/2 cups
Light brown sugar - 1 tbsp.
Salt - 2 tsp.
Active dry yeast - 2 1/4 tsp.
Unsalted butter - 5 tbsp. (melted, room temp.)
All-Purpose flour - 3 1/2 cups
Vegetable oil - 2 tbsp.
Baking soda - 1/3 cup.
Egg wash - 1 (add 1 tbsp water)
Kosher salt - 1/4 cup
Ingredients for dip:
Unsalted butter - 2 tbsp.
All-Purpose flour - 2 tbsp.
Whole milk - 2 cups (warm)
Cheddar cheese - 1/2 cup
Worcestershire sauce - 1/2 tsp. (alternative: soy)
Cayenne pepper - a pinch
Salt and Pepper - as needed
Method of preparing the bagels:
  1. In a mixer bowl, combine the water, sugar and 2 tsp salt. Add the yeast and wait about 5 minutes until bubbles start to form.
  2. Attach the dough kneading hook, add the butter and start the mixer on low speed.
  3. Add the flour gradually, 1/2 cup at a time. You may need to add an extra 1/2 cup.
  4. Turn the speed up to medium and keep kneading 5 more minutes until your dough is firm.
  5. Take the dough out, grease the bowl with the vegetable oil and put the dough back in. Cover the bowl with a towel and let sit in a warm place until the dough doubles in size- this should take about 30-45 minutes.
  6. Preheat the oven to 425°F and line 2 baking sheets.
  7. Cut the dough into 6 equal parts and roll each part into a long strip, about 20 inches. Cut each strip into smaller, 1 1/2-inch bites.
  8. Boil 3 quarts water with the 1/3 cup baking soda. Blanch the dough bites, working in batches. Each batch should be about 8-10 bites. They should be in the water until they puff- about 20 seconds.
  9. Remove the bagel bites from the water with a slotted spoon and arrange them on the lined baking sheets. Brush with eggwash and sprinkle with salt.
  10. Bake for 15 minutes or until golden brown and let cool on a drying rack. Serve with the dip.
Method of preparing the dip:
  1. Heat the butter in a small saucepan over medium-low heat.
  2. When it bubbles, add the flour and stir for a minute. gradually add the milk, while stirring constantly.
  3. Let simmer 5 minutes, stir occasionally. Add the rest of the ingredients and serve.
