These wonderful croquettes are rich in calcium, iron, and protein, and are great as an appetizer or a healthy snack during the day. They are really easy and quick to make as well, making them a no-fuss healthy dish.
Strain the lentils well. Cook them with 2 cups water in a pressure cooker, over a medium-high flame. Cook them until the cooker whistles or the lentils soften. Finally, strain the lentils again. If you don't have a pressure cooker, cook the lentils over a medium flame with water, until the water boils. Simmer and cook until they soften. They should be soft enough to mash.
Mix the lentils with the rest of the ingredients in a bowl. Prepare 6 equal-sized croquettes from the mixture.
Fry the croquettes in an oiled pan, over low heat, until golden brown on both sides. Place the croquettes on a plate lined with a paper towel to absorb the oil, plate and serve.
Chef's Tip:
The lentils need to soak for at least 8 hours. A metal bowl would be best as the lentils may stain plastic.
