Pesto is a wonderful Italian condiment that works great as a base for pasta sauce, or as a spread on sandwiches. This thick, green sauce typically tastes bright and herby. It's also a little garlicky. When mixed into rice, risotto, or mashed potatoes, and when added onto hot vegetables, it can add an intense flavor.
Method of preparing the Pesto:

In a food processor, blend the basil, garlic, and pine nuts, until you reach a chopped consistency.

If you’re using the pesto immediately, mix in the rest of the olive oil with the cheese. If you want to save the sauce, drizzle the rest of the oil on top and freeze.

The condiment can stay frozen for up to 3 months.
