Method of preparing the sauce:

Cook the pasta in salted boiling water, 6-8 minutes until chewy but not too soft. Drain but keep 1/2 cup of the water.

Pulse the rest of the ingredients in a blender or manually mash together until smooth. Mix in the 1/2 cup pasta water.

Plate the pasta and pour the sauce over. Garnish with extra parsley and some parmesan cheese.
