Watermelon Rind Coleslaw Salad

This classic coleslaw recipe swaps the cabbage for grated watermelon rinds. Feel free to customize the quantities of the vegetables to your taste!

Watermelon Rind Coleslaw Salad
Ingredients for Watermelon Rind Coleslaw Salad:
Carrots - 3
Onions - 2
Watermelon rinds - from 1/2 a small watermelon (chopped and peeled)
Dill - a handful (can be replaced for chives, parsley, or coriander )
Mustard - 1 tbsp.
Mayonnaise - 3 tbsp.
Sour cream - 3 tbsp. (can be replaced for plain yogurt)
White wine vinegar - 1 tbsp.
Paprika - a pinch
Method of preparing the Watermelon Rind Coleslaw Salad:
  1. Grate all the vegetables. 
  2. Mix all the dressing ingredients together: mustard, mayonnaise, sour cream, white wine vinegar, and paprika.
  3. Add the dressing to the vegetables and stir until combined. Enjoy!
