Method of preparing the salad:

Mix the onion in vinegar and let sit. Mix the peaches in olive oil, salt and pepper and let sit.

Lightly roast the peaches 2-3 minutes on each side.

Arrange all ingredients in a bowl, season with more oil and serve.
