Immunize your body during the cold season with this protein, mineral and vitamin C salad. We are big fans of the chicken-orange couple as their flavors complement each other so well. Plus, what's not to like about a chicken salad? It's quick, easy, low-fat and full of protein. We think our roasted butter croutons will make a perfect topping for this one.

Method of preparing the chicken salad:

Wash and chop the lettuce. Slice the onion. Peel and slice the orange into discs, cutting away the extra white peel.

Butter a skillet over medium-high heat. Season the chicken to your liking and grill it on each side for 3-5 minutes. Allow cooling before cutting into strips.

Chef's Tip:
For an extra kick of protein, add some beans of your choosing. For a gluten-free meal, skip the croutons.
