Method of preparing the salad:

Soak the pears in Cognac. Lightly roast the fennel slices 2-3 minutes on each side.

Add the cabbage slices and stir fry for another 3-4 minutes.

Then add the pears and rest of the ingredients (apart from the cheese and nuts), and stir 5-6 minutes until everything starts steaming.

Serve with the cheese and nuts toppings.
Chef's Tip:
If you choose not to use brandy or cognac, toss the pears in 1 tablespoon lemon juice to preserve their color and freshness.
