Method of preparing the Cheesy Corn & Jalapeno Dip:
Preheat the oven to 400°F.
In an 8-inch oven-safe skillet, cook the diced bacon over medium heat until brown and crispy. Remove the bacon from the grease and drain it on a paper towel. Keep the skillet for later use.
In a medium bowl, mix the cream cheese, mozzarella, garlic powder, and cayenne powder. Add the jalapeno and red onion. Add roughly 3/4 of the corn, cooked bacon, and chopped basil, reserving the rest of each for the garnish. Stir until fully mixed, then spread into the skillet.
Bake for about 30 minutes, or until the cheese is melted and the dip is bubbling.
Garnish the dip with the reserved corn, basil, and bacon.
