These cauliflower biscuit bites are the perfect healthy snack when you feel like you want something doughy, soft and sweet, but not full of fat. These are actually healthy for you, so they do make the perfect guiltless snack.
Steam cook the cauliflower florets and let cool completely. Preheat the oven to 400°F (205°C). Prep a muffin tin.
Grind the cauliflower in a food processor, then scrape into a medium bowl. Stir in the yogurt, cheddar, whole eggs, salt, and pepper.
Pour the egg whites into a separate medium mixing bowl. Whip with a hand mixer until firm peaks form. Fold the whipped egg whites into the cauliflower mixture.
Scoop the mixture into the muffin tin. If desired, top with some extra cheese. Bake for 20-25 minutes, until golden brown.
