Give a little twist to that boring old mashed potatoes. Making some turnip (or parsnip, if you're lucky to chance by them in the grocer's) mash won't shake your world but know that it is an integral part of the meal's taste.
Ingredients for parsnip mash:
Method of preparing the pork:
-
To make the mash, cook the turnips in a pan of boiling water over high heat for 15 mins, then drain and mash with some seasoning and butter. Keep warm until served.
-
Heat oven to 360°F. In the small bowl of a food processor, put the cinnamon, half the paprika, the red bell pepper, 1 garlic clove, the oregano and breadcrumbs. Pulse until very finely chopped, then pour into a large bowl and add the pork and the egg. Season well.
-
Rub 1 tsp of the oil over a large baking sheet. Squish the pork and pepper mixture together with your hands, shape into 8 meatballs and place evenly spaced on the prepared baking sheet.
-
Bake the meatballs for 20 mins or until cooked through and lightly golden.
-
For a quick tomato sauce, put the remaining crushed garlic and paprika in a small saucepan with the pasta sauce and cook over medium heat for 5 mins, until thickened a little.
