Method of preparing the pickled corn:

Cut the corn into rings or quarters (with the cob!) and set aside.

Sterilize jars in boiling water. Boil the rest of the ingredients and add the corn to cook. Simmer 10 minutes.

Divide the solids into jars and cover with the liquid. Lid and process in a bath of hot water. Store in the fridge after opening.
