Method of preparing the Quick Fermented Asparagus:

Cut the stalks so that they stand 3/4 to 1 inch below where the jar neck begins to narrow. Insert into jars and add the salt.

Fill the jar with water, leaving a small gap at the top.

Top the asparagus with green onions. Place an orange slice or two on top of the asparagus. This will prevent the vegetables from floating to the top, and it also adds flavor.

Double-check and make sure that the ingredients are fully submerged in water. If not, add more water.

Place the jar on a plate. Cover the jar with a piece of cloth (cheesecloth works great for this).
