We've tried many types of pickled fruits and vegetables, but these ones are in another league. They might remind you a little of our pickled watermelon rinds, if you've ever tried them. Both are unique pickle choices that will make sense only after you've tried them.

Put the pineapple in one large jar. Mix the rest of the ingredients in a bowl and pour over the pineapple. You can add more lemon juice if needed- make sure all of the fruit is covered.
