Giardiniera (pronounced as “jar-din-air-ah”) is an Italian condiment consisting of pickled vegetables marinated in vinegar or oil, and it's delicious. It can be used to top hot dogs, pizza, and sandwiches or used as a dip for nachos, crackers, or toasted bread.

Cut the vegetables into bite-sized pieces.

In a pan, combine white wine vinegar, water, sugar, salt, and bay leaves, and bring the mixture to a simmer on medium heat.

Add the cauliflower and carrots into the brine and simmer for 3 minutes. Then add the celery and peppers, and simmer for another 2 minutes before removing from the heat.

Add the pepperoncini to the vegetables, then cover the pan with a lid, and let sit for 5 minutes.

In a bowl, combine olive oil, oregano, and fennel seeds. Add 2 tbsp of the vinegar brine into the bowl. Stir.

Drain the vegetables, then transfer to the bowl with the marinade and toss to coat. Let cool to room temperature. This should take around 15-20 minutes.

Transfer into a jar or airtight container and refrigerate for at least 1 hour before serving. The flavor will develop fully after 1 day.

You can store giardiniera in the fridge for up to a week. Giardiniera can be stored either cold or at room temperature.
