Homemade Yogurt

Preparing yogurt at home may sound complicated or even daunting at first, but in reality, it couldn't be simpler. This recipe makes unflavored plain white yogurt, which you can then spruce up with toppings like jam, fresh fruit, honey, herbs, or granola. The possibilities are endless!

Homemade Yogurt
Ingredients for Homemade Yogurt:
Whole milk - 1 quart (4 cups)
Whole-milk yogurt - 3 tbsp. (plain and unsweetened)
Method of preparing the Homemade Yogurt:
  1. In a large saucepan, heat the milk on medium heat. Heat up until the milk reaches 180°F (80°C) and continue cooking for another 5 minutes, whisking from time to time. Then set aside.
  2. Let the milk cool to 115°F (46°C). Once the milk has cooled, stir the yogurt into the milk until smooth.
  3. Transfer the yogurt mixture to a 1-quart jar (no lid). Cover the jar in clean kitchen towels, completely wrapping the sides and the top. Then let the yogurt be undisturbed in a dark and warm place for 4-5 hours. When ready, the yogurt should have the consistency of thick custard.
  4. When ready, refrigerate the yogurt for 30 minutes in an open jar. Then seal the jar with a tight-fitting lid.
  5. Serve the yogurt chilled, topped with the flavorings of your choice.
  6. If you'd like to make another portion of yogurt, save 3 tbsp of your yogurt to use as the starter culture for the next batch.
Chef's Tip:
Buy a plain yogurt the taste of which you like. Every company uses a slightly different starter culture, and variations in taste are quite common. Whatever you choose, it's important to choose a plain, unsweetened yogurt.
