The kids are going to go bananas for this one. A gluten-free, rice base pizza, with the winning tomato sauce and mozzarella combo. Try as you might, you can't go wrong with that.
Method of preparing the pizza:

Boil salted water and cook the rice for 15 minutes. Drain and transfer into a bowl.

Add the butter, folding to melt. Once melted add the parmesan grates and the egg white.

Preheat the oven to 400°F. Tighten and press the rice on a tart pan. Bake for 20 minutes.

Line a baking dish and flip the rice base on it. Use the video as guidance. Spread your tomato sauce and mozzarella on top.

Drizzle with olive oil and bake again, on the grill mode, same temp, for 10 minutes.
