Comfort food deluxe. This pizza goes nuts and takes the traditional cheese and jam pastry to a whole new world. It marries fresh raspberry and crunchy candied pecans, that go along perfectly with the nutty taste of the brie. We suggest our recipe for pizza dough instead of the store-bought option.
Method of preparing the pizza:
-
In a small pot, melt 2 tbsp butter over medium heat. Add the sugar, cinnamon and pecans. Stir for 4-5 minutes until the sugar caramelizes.
Remove from heat and allow to cool. Hooray! You now have caramelized pecans.
-
Preheat the oven to 450°F (230°C). Flatten the dough on a floured surface into a circular shape.
-
Brush the dough with some butter and place brie slices on top. In the spaces between slices, put dollops of jam, and add half of the fresh raspberries and rosemary.
-
Place the dough on a baking sheet and bake for 8-12 minutes, until the dough is golden, and the cheese fully melts.
-
Remove the pizza from the oven, drizzle with honey and sprinkle with the pecans and the remaining raspberries.
Let it cool for 3 minutes and enjoy.
