A summer specialty, this pizza is a little sweet and nutty. Combining one of the summer’s best fruits – the melon, with pine nuts and ricotta cheese, plus the light tang of fresh arugula. It can be a delicious dish, as well as a desert. We suggest our recipe for pizza dough instead of the store-bought option.
Method of preparing the pizza:

Preheat the oven to 570°F (300°C). Flatten the dough on a floured surface into a circular shape.

Mix the honey and ricotta cheese in a bowl. Sprinkle the cheese on the dough, and add the melon pieces.

Bake for 8-12 minutes, until the dough is golden, and the cheese fully melts. Meanwhile, roast the pine nuts.

Sprinkle the pine nuts and arugula leaves, and add a pinch of salt. Allow cooling for 3 minutes before serving.
