Method of preparing the Watermelon, Radish and Avocado Salad:

In a large serving bowl, add the watermelon, radishes and shallots. Then, whisk together the olive oil, vinegar, 1/2 tsp salt and 1/4 tsp black pepper in a small bowl.

Now pour half of the dressing over the watermelon, radishes and shallots. Toss well. Add the arugula, the avocado and the rest of the dressing. Toss gently. Top with fresh basil or mint leaves. Season with more salt and pepper to taste. Serve fresh.
Chef's Tip:
Watermelon has high water content and will begin to release its juices the moment the dressing is added. Therefore, wait to dress the salad until just before serving.
