Tofu, Avocado, and Roast Chili Sandwich

Looking for some quick and healthy lunch ideas? This amazing tofu, avocado, and roast capsicum sandwich might be your answer. It hardly takes 5 minutes to prepare and is filled with the goodness of many veggies. The whole wheat bread also takes care of your protein and fiber intake for the day. Have it fresh to keep yourself satisfied for a couple of hours during the middle of a busy day.

Ingredients for Tofu, Avocado, and Roast Capsicum Sandwich:
Tofu - 75g (cut into 2 thin slices)
Ground cumin - 1/2 tsp.
Chili flakes - 1/4 tsp. (dried)
Avocado - 1 tbsp. (mashed)
Sandwich bread - 2 slices (whole wheat)
Baby spinach - a handful
Red chilli - 1-2 (roasted and sliced)
Carrots - 1/2 (peeled and grated)
Method of preparing the Tofu, Avocado, and Roast Capsicum Sandwich:
  1. Sprinkle the tofu evenly with cumin and chilli. Spray a non-stick frying pan with oil and heat over medium-high heat. Add the tofu and cook for 1-2 minutes. Make sure each side is golden.
  2. Spread the avocado over one slice of sandwich bread. Top with the spinach, capsicum, and carrot, tofu. Cover with the other slice. Enjoy!
Chef's Tip:
You can also use 40g of wholemeal sandwich thins instead of the whole wheat sandwich slices if the latter isn't available.
