Avocado Grilled Cheese Sandwich

Not all recipes have to be so extravagant. This recipe is for those times you feel uninspired, don't know what to eat, or what to cook. Then a sandwich crosses your mind. Let us suggest a real gourmet sandwich- no more cheese and ketchup sandwich!

Avocado Grilled Cheese Sandwich
Ingredients for sandwich:
Bread - 2 slices
Pesto - 2-3 tbsp.
Mozzarella - 2 slices
Avocado - 1/4 (sliced)
Goat Cheese - 2 tbsp. (crumbled)
Baby spinach - a handful
Olive oil - as needed
Method of preparing the sandwich:
  1. Spread about 1 tbsp pesto onto each slice of bread. On one slice of bread, add 1 slice of mozzarella cheese, sliced avocado, crumbled goat cheese, spinach and then another slice of cheese. Top with the second slice of bread. Gently press together.
  2. Heat 1 tbsp olive oil in a frying pan over medium-low heat and fry until the bread is golden brown. Press on the sandwich lightly then flip and cook until golden brown.
