Not all recipes have to be so extravagant. This recipe is for those times you feel uninspired, don't know what to eat, or what to cook. Then a sandwich crosses your mind. Let us suggest a real gourmet sandwich- no more cheese and ketchup sandwich!

Method of preparing the sandwich:

Spread about 1 tbsp pesto onto each slice of bread. On one slice of bread, add 1 slice of mozzarella cheese, sliced avocado, crumbled goat cheese, spinach and then another slice of cheese. Top with the second slice of bread. Gently press together.

Heat 1 tbsp olive oil in a frying pan over medium-low heat and fry until the bread is golden brown. Press on the sandwich lightly then flip and cook until golden brown.
