Method of preparing the Ham and Bean Soup:

Using butcher’s twine, tie the fresh rosemary and thyme together.

Place all the ingredients except for the diced tomatoes and salt and pepper into the slow cooker.

Cover the crock-pot and cook on high heat for 4 hours or on low heat for 6 hours.

Add the diced tomatoes and their juice to the slow cooker, season with salt and pepper to taste. Continue to cook the soup for an additional 2 hours on high heat, stirring occasionally.

Remove the herb bundle and bay leaf before serving the soup with crusty bread.
