Set 6 peeled oranges aside whole. Separate the remaining oranges into segments.

In a medium-sized pot, the cranberries, honey, and bourbon and bring to a boil over high heat.

Lower heat to medium for 5 minutes.

Add the whole mandarins and the segments to the pot. Stir them in carefully. Simmer for 5 minutes more then remove the pot from the heat.

Allow the cranberry sauce to cool for a few minutes, then transfer it to a jar.
Chef's Tip:
If you don't have or don't want to use bourbon, simply sub water.
