Easy and Quick Fish Curry

This fish curry isn't just scrumptious, it can be prepared in only 5 minutes! What's more, it's low-fat as well! This heartwarming fish curry will make for a filling and healthy meal on those lazy weeknights. This recipe calls for a certain type of curry you can find in stores, but you can also use regular curry. Ingredients for Easy and Quick Fish Curry:
Vegetable oil - 1 tbsp.
Onions - 1 large (chopped)
Garlic - 1 clove (chopped)
Madras curry paste - 1-2 tbsp.
Vegetable stock - 3/4 cup
White fish fillet - 1/2 lb. (skinned and cut into big chunks)
Method of preparing the Easy and Quick Fish Curry:
  1. In a deep pan, heat the vegetable oil and gently fry the onion and garlic for about 5 mins. Next add the curry paste to the mix and stir-fry for about 2 minutes. Add the tomatoes and vegetable stock.
  2. Once it begins to simmer, add the fish. Cook gently for 5 minutes. The fish is ready when it flakes easily. Serve immediately with naan bread. You can also use rice.
Chef's Tip:
Simmer the sauce before adding the fish for at least ten minutes to ensure the onions are soft and the tomatoes are cooked down.
