Salmon is considered to be super healthy for its good fats and high vitamin D contents, but not everyone enjoys the taste. If you or someone in your family isn't a fan of fish but you'd like to incorporate fish into the weekly menu, this maple and bacon salmon is the way to go! Sweet, smoky, and oh so juicy, this baked salmon is just scrumptious.

Method of preparing the Maple and Bacon Salmon:

Preheat the oven to 400°F (200°C).

Stack the lemon slices on the bottom of a large baking dish, and then put the salmon fillet on top of it.

Season the salmon with salt, pepper, and garlic powder.

In a bowl, combine 2 tbsp maple syrup, mustard, oil, and lemon juice. Pour the marinade over the salmon fillet.

Bake the salmon for 20 to 25 minutes, or until fully cooked. Switch the oven to broil and continue baking until golden for another 3 minutes.

In a bowl, combine the remaining 3 tbsp of maple syrup, brown sugar, salt, and pepper. Set aside.

Fry the bacon 4 minutes on each side until golden. Transfer the bacon to a paper towel to drain.

Drain the bacon fat from the frying pan, then pour the maple syrup mix into the pan over medium heat. Then add in the bacon and cook, flipping each slice a few times to glaze the bacon.

Crumble the glazed bacon over the cooked salmon right before serving. Sprinkle with chopped chives and serve with steamed veggies, rice, or any side dish of your choice.
