Preheat your oven to 350°F. Prepare the meatloaf combining all ingredients in a bowl, mix well, but do not overhandle the mixture, as it may be too dense. Chill.
Spray a cupcake tin with nonstick cooking spray, filling each with a small handful of meat mixture. Press the mixture down gently until it is completely filled.
Spread a teaspoon of the sauce on top and bake for about 30 minutes, until the meat is cooked through.
Method of preparing the toppings:
Whip the potatoes with the egg yolk, half and half, salt and pepper, until smooth.
Stir in the melted butter and fill a piping bag with the potato mixture. Set aside.
Once the meat has cooked through, turn on the broiler and pipe some potato mix over each cupcake.
Broil for about 2 minutes, until lightly browned. Enjoy!
