Combine half of the rose petals and sugar, shake well and cover with plastic wrap. Put it in the fridge for 30 minutes.
In a pot, combine the cream, rose petals, sugar, and the coarsely crushed nuts, and let it simmer for 12 minutes.
When youโre ready to make the ice cream, combine the syrup, rose water, and chilled cream in an ice cream maker and follow the instructions of the ice cream maker. Add lemon juice and churn for 5 more minutes. Freeze for at least 6-8 hours.
Donโt have an ice cream maker? Simmer the cream with rose petals and sugar as mentioned above. Chill the mix and then fold in the other ingredients. Stir until the syrup evenly mixes with the cream. Stir in the lemon juice and freeze. When partially frozen, take it out and whisk it again. Freeze until ready to eat.
Chef's Tip:
If you're looking for a thicker consistency, swap the half & half for another 7 oz heavy cream.
