Place a deep pot over medium heat, add lemongrass, mint, sugar, and water, mix well and bring to a boil. Then remove the pot from the heat.
When the lemongrass mixture cools, place it in a blender, blend until smooth, and then transfer to a large bowl. Add lemon juice and mix well.
When serving in the summer, place a few ice cubes (whole or shredded) into each glass, pour the drink to 2/3 the glass, and fill the rest with sparkling water.

While this is the perfect refreshment in the summer, you can also serve it hot and without sparkling water as a nice brewed tea. Garnish with lemon and leaves.
