Vegan Cookies ’n’ Cream Ice Cream

This vegan cookies & cream ice cream is perfect for a diabetic diet, thanks to the cashews that help regulate blood sugar levels. They also make this ice cream perfectly creamy, without the bloating that may come with dairy.

Vegan Cookies ’n’ Cream Ice Cream
Ingredients for Cookies ‘n’ Cream Ice Cream:
Cashews - 2 cups
Maple syrup - 1/4 cup
Lemon juice - 1/4 cup
Water - 1/2 cup
Vanilla Extract - 1 tsp.
Salt - a pinch
Chocolate chips - 2 tbsp.
Chocolate cookies - 9 (crushed)
Method of preparing the Cookies ‘n’ Cream Ice Cream:
  1. Soak the cashews overnight, and then wash them, before drying them well. In a food processor, mix all the ingredients, except for the cookies and chocolate chips, and blend until the consistency is smooth.
  2. Add the chocolate chips and cookies and blend a few times. Freeze for 4 hours before serving.
