Method of preparing the Candied Watermelon Rinds:

Peel the green skin off of the watermelon rinds and chop the rinds (preferably leave some watermelon flesh on it).

Boil just enough water to cover the watermelon rinds. Once boiling, add the rinds and boil them for another 10 minutes. Drain.

In another pot, boil the sugar, vanilla extract, and 1 cup water. Add the rinds and let them simmer for 10 minutes. Drain, but this time, you can keep the water as syrup.

Dry the rinds on paper towels for 24 hours. Enjoy!
