Method of preparing the Apricot Rice Pudding Popsicle:

Remove the tough outer layer of the lemongrass stalk.

Mix milk, cream, coconut milk, lemongrass, ginger, 1/2 cup water and vanilla extract.

Bring to a boil. Let cool for 15 minutes.

Place rice in 1/2 cup of water for 10 minutes and then drain. Strain the coconut mixture through a sieve and add the rice.

In a saucepan bring to a boil and then let it simmer on low heat for 30 minutes, until the rice is soft.

Once cooled stir in apricots and sugar. Freeze for at least 3-4 hours.
