Sugar and Cinnamon Pretzel Bites

When it comes to kid-friendly desserts, you can't go wrong with a bite-sized pastry like these yummy cinnamon and sugar pretzel bites. They are coated in cinnamon and sugar, have a thin, sweet crust, and the softest, fluffiest interior you can imagine. Combine these pretzel bites with a sweet cream cheese dip, and they will be gone in one sitting!

Sugar and Cinnamon Pretzel Bites
Ingredients for coating:
Butter - 1 stick (divided, softened)
Light brown sugar - 3/4 cup
Ground cinnamon - 3 tsp.
Cream cheese - 1/2 block (4 oz.)
Vanilla Extract - 1/2 tsp.
Powdered sugar - 1 1/2 cups
Ingredients for dough:
Active dry yeast - 2 1/4 tsp. (dissolved in 1 1/2 cups warm water)
Warm Water - as needed
Salt - 1 tsp.
Brown sugar - 1 tbsp.
Melted butter - 2 tbsp.
Egg - 1
Baking soda - 1/2 cup
Method of preparing the coating:
  1. Set 1/2 the melted butter in a small bowl. Set the sugar and cinnamon in another.
  2. Mix the remaining 1/2 stick butter with powdered sugar and vanilla. Set aside.
Method of preparing the dough:
  1. In a large bowl, stir together the yeast and water, the sugar, and butter. Add in the flour 1 cup at a time until the dough isn't sticky. If more flour is needed, add 1 tbsp at a time until no longer sticky.
  2. Knead the dough on a lightly floured surface. Form a ball, grease a bowl, and insert the ball. Cover and let rise for 30 minutes.
  3. Preheat the oven to 425°F (215°C). Line a large cookie sheet with parchment paper.
  4. Boil 9 cups of water and baking soda. Cut the dough into 6 equal parts.
  5. Roll each part into 6 ropes about 20-22 inches in length. Then cut each part into 10-12 inch pieces.
  6. Blanch the dough pieces in the water for no longer than 30 seconds. Work in batches and remove the bites with a slotted spoon.
  7. Whisk the egg with 1 tbsp of water to make an eggwash. Brush the cooked pretzel bites with the egg wash.
  8. Bake the pretzel bites for 15 minutes until golden brown.
  9. Dip them into the melted butter you prepared ahead. Then roll in the sugar-cinnamon coating.
  10. Serve with the cream cheese dipping and enjoy!
